Lamb Shoulder Roast - Rosemary and honey

A delicious tender meat with a subtle sweetness.

Great on its own or in a shepherds pie.

Ingredients

Lamb shoulder roast

4 Garlic cloves cut into spears

1 tbsp Rosemary leaves

1 tbsp Smoked Paprika

1 tbsp Salt

2 tbsp Olive oil

2 tbsp Honey

Directions

Preheat oven to 300°F

Place meat on a rack in a roasting pan meaty side up.

Using a sharp knife cut a deep grid pattern (1 1/2" width worked well for me).

Sprinkle the olive oil over the meat. Rub it evenly over the top of the meat.

Sprinkle salt, paprika,and rosemary over meat and rub them in evenly.

Place garlic spears in the cuts

Wrap meat in tinfoil and cover roast pan

Roast for 2 hours and 30 minute.

Remove tinfoil and drizzle honey over meat.

For a more browned finish raise the temperature to 400°F for the final 15 minutes.
